One of the great products to have in your pantry is a simple can of tuna from Conservas Ortiz. So many recipes can be done with that simple can of tuna from salad nicoise to great pasta. Thanks to my Spanish in-laws, I have discovered the Ortiz tuna can. Although it comes at a premium, you will never go back to your usual supermarket tuna can.
Established in 1891 in the Spanish Basque region, the Conservas Ortiz has been preserving fishes ever since. Contrary to most can tuna brands using substandard flakes of tuna, the Conservas Ortiz only use the best ingredients available such as belly fillet, which are the tenderness and most delicate part of the tuna.
Furthermore, only traditional and sustainable fishing methods such as live baits are used to individually catch their fishes rather than trailing nets. Once caught, the fishes are processed immediately in at the docks and cooked for seawater and hand-packed with extra virgin olive oil. Interestingly, the flavour of the can improves with ages as the tuna interacts with the olive oil.
The Conservas Ortiz brought this rather healthy but very simple food to another level that would sit perfectly next to some of the finest products. My suggestion is simply to eat this product like it is with some good bread and paired with a nice glass of white wine and you have yourself a three star Michelin lunch. Next time you stroll through your deli get your hand on a can from Conservas Ortiz. If you have already tasted the tuna try out the anchovies.
