Spending many summers as a child in the south of France, I have always loved going to the farmers markets and one of my favorite products was the Anchoiade from Provence. It is delicious yet simple dip bringing a ton of flavour to a selection of raw or grilled vegetables.

It is so simple to make and it is just the perfect dipping to bring on a junk boat or a picnic.

Not for the faint of heart — or tender of taste bud — it’s an anchovy lover’s dream. Try it out, you won’t be disappointed.

A simple dipping made out of anchovies. Perfect with baby carrots, radishes, and some nice grilled bread.

Instructions
  1. Put the anchovies, garlic, shallot, parsley and black olives into a food processor and whiz until pureed
  2. Add one teaspoon of vinegar and some black pepper
  3. Keep the motor turning and add the reserved anchovy oil and add about 4 to 5 tablespoon of olive oil until you have your prefered consitency
  4. Simply adjust the seasoning and enjoy
