I have tried out this simple but yet stunning beef tenderloin with pink peppercorn and whisky sauce recipe from Donna Hay, one of Australia star cook and writer, a number of time when hosting dinner. Every single time, it was a smashing success. Have a try and you will be surprised how much people love it. I have changed a bit the proportion from the original recipe to make it even creamier and works wonderfully.

I love the way the whisky and the pink peppercorn flavours beautifully the richness of the cream by adding a smoky but yet subtle flavor to dish that combines so well with the char-grilled beef while the peppercorn adds the spiciness.

Char-grilled beef tenderloin
Pink peppercorn and whisky sauce
Crispy potato and gruyere dominoes
Instructions
Pink peppercorn and whisky sauce
  1. Heat the oil and butter in a large frying pan over medium heat
  2. Add the eschalot and garlic and cook for about 4 to 5 minutes or until softened
  3. Add the beef stock and cook for about 15 minutes until reduced by half
  1. Strain the sauce and return to the pan. Discard the eschalot and garlic
  2. Add the peppercorns, sea salt, cream and whisky and cook for about 15 minutes on a low heat
Char grilled beef tenderloin
  1. Marinated your beef with the oil, sea salt and pepper prior to cooking on a hot grill to your liking
Crispy potato and gruyere dominoes
  1. Preheat the oven to 200 C.
  2. Cut the potatoes as finely as possible and place the slice in a bowl
  3. Add the melted butter, cheese and salt to the bowl. Toss to combine
  4. Place the potatoes overlapping each other on a baking tray lined with non stick baking paper
  5. Toss the tray with extra cheese
  6. Bake for 30 minutes or until crisp
